How to Make Your Stainless Steel Pan Non-stick
- Do a water heating test. First heat up the pan on medium-high heat without oil, then drop some water on the pan; if the water evaporates immediately, it's not hot enough until the water you dropped can dance on the pan. (You can feel the temperature of the pan with your hand more often during the test to memorize that optimal temperature.)
- Then turn the heat down to low and add oil.
- Wait until the oil to ripple and then add the food to be cooked, keeping the heat on low the entire time.
- Allow food to cook until shaped before turning or moving it.
- Clean your pan as soon as possible after frying, at the latest before the residual heat of the pan has completely disappeared.
